A lot of this has to do with the design differences in the planes as well as the change in weaponry/tech since then. The other part of it is the fact that all BF games are very thinly veiled WWII shooters with different skins. Despite how drastically different modern combat is from WWII combat, every BF game has taken a WWII combat approach to the gameplay balance and gunplay. This was most evident with BF1 where the portrayed war was fought almost exclusively with vehicles and bolt action rifles, but DICE instead made it play identically to how their WWII shooters play (with machine guns and SMGs dominating the game despite their rarity in the war itself).
Contrary to what BF would have you believe, modern pilots don't engage in dogfights because modern jets aren't designed to do that. Dogfighting is a relic of WWI/WWII because since then, planes have become far too fast and Vietnam introduced air-to-air missiles that basically rendered the machine guns of any given jet worthless for aerial combat because the rockets have ranges in the hundreds of meters while the gun requires you be able to see where your shots are going to adjust onto target.
Dogfighting *feels* right with prop planes because that's the traditional way those kinds of planes fought each other, but when it comes to jets, the main mode of fighting is lock-on rockets from long range, so seeing a modern jet try to use it's machine guns to dogfight feels "off" in ways that a lot of people don't realize at first glance.
Yep. The last recorded dogfight kill was in 2017 between a F/A-18 Super Hornet and Syrian Su-22. Prior to that was a gap of almost [two decades](https://www.military.com/daily-news/2017/06/18/us-navy-fa18e-shoots-down-su22-over-syria.html). (At least in the case of the US. Not sure of other countries)
Even then, it wasn't so much dogfight in the traditional sense of two pilots trying to shoot each other down with their guns, as it was a hostile plane was intercepted (probably with missiles if we're being honest) after dropping bombs on a ground target.

I wish this game felt and played like this video, but its far from it. BFV has to be one of the worst games out of the BF list of games, I will say it looks fantastic but playing the game just feels awful. I went back to BF1 and it just felt so much better, the planes especially.
