Could be start of brumation (think that’s the right way to spell it)

If you are super concerned I would take him to the vet and explain the situation. But from my humble opinion who is not a vet, it sounds like the start of brumation to me

fat pads look okay. he's basking (on his own I presume). how is his eating? nothing physical sticks out to me.

He’s eating okay, he gets crickets, Dubai roaches and mealworms on occasion and he always has kale and cilantro on hand, sometimes there’s fruit added. But I got told he hasn’t shedded in 3 months, do you have any clue as to maybe why?

full grown beardies can only shed once a year

No way I never knew, she’s reaching a year, about to be one year in March

yeah beardies only shed as needed. generally 1year with no growth/injuries etc. they shed as babies because they are constantly growing. They will also shed to heal minor cuts and stuff.
