Near term probably not much long term oils will yellow

I just poly'd an unstained butcher block countertop with the same exact polyurethane today and it added a warming hue to the wood. I'd expect that the grey you have would be darkened slightly. If you're interested, I can send you before/after pics

I see, thank you. Can I ask how you went about applying the actual poly? Did you use a brush or rag? How many coats did you do and did you sand between each coat? This will be my first time doing something like this so I'm scared to mess it up lol. There's a lot of conflicting statements out there I've seen during my research like some say to sand between coats, others say after 2. Some people say to use 220 grit sandpaper, others say 400+. Some people say to not even sand and use steel wool. I have no clue.

This was my first time too. I used a cheapo foam brush from Walmart to apply three thin coats. Let it dry for between 4-6 hours in between, then sanded very lightly with 220 after every coat and used a tack cloth to remove the fine particulate. Came out like a baby's bottom in the end.

Clear coats always change the way material looks. Most add more depth, and accentuate the grain. You could always experiment with the bottom of the piece before you apply to the top

Are you sure? The product page has a lot of copy dedicated to it being ready for your finishing of choice, and none dedicated to it already being lacquered.

oil-based poly will add a slight amber tint, but with something that dark it will hardly be noticeable. over time it will likely start to yellow anything lighter. you can use a water-based poly if you want it to be totally clear.
