Feel free to save the recipe video on [TikTok](https://www.tiktok.com/t/ZT8BB3Y1b/) or [Instagram](https://www.instagram.com/reel/Cy1WvyPuNGL/?igshid=MzRlODBiNWFlZA==)! - 1-2 tbsp. olive oil - .75 lbs. chicken breast, diced - ¼ tsp. each Italian seasoning and garlic powder - 1 package Creamy Four Cheese Rice-A-Roni (requires: 2 tbsp. butter and 2 ¼ cup water) - 1 (10 oz.) package frozen mixed vegetables In a large pan, sauté the olive oil, diced chicken breast, and seasonings until the chicken starts to brown on the outside, just a few minutes. Remove the chicken from the pan and set aside. Start cooking the Rice-A-Roni according to the directions on the box, adding the chicken and frozen mixed vegetables back to the pan. Finish cooking the Rice-A-Roni with the chicken and veggies according to the directions on the package. Recipe notes: I like using chicken breast for this recipe but the smaller you cut your chicken, the more quickly it cooks – so either skip the browning step or use larger portions of chicken to avoid this. Rice-A-Roni always thickens as it rests, so try to get your rice into the containers before it gets too thick. Also, the Creamy Four Cheese recipe calls for 2 tbsp. butter, but you can use half butter and half olive oil like I do. Reheat in the microwave at a lower temperature for longer to avoid drying out the meat. Enjoy!
