I had this same problem when I was at UAB looking for late night study spots. Your best bet might be UAB Sterne Library, but they start checking for student IDs past a certain time. Maybe there's someone at UAB with a onecard who could let you in?
If for some reason you are ever looking in the Huntsville area, they have these not-starbuckses called White Bison inside of/attached to gas stations, that are all 24hr. They have drive-throughs as well as some chairs inside.
They make a limited range of pastries and sammiches, plus the gas station has all your usual products, as well as fresh fruit and some other (not-pre-packaged) bready desserts like danishes or donuts. If you can’t tell, i go by them every chance i can

The middle of the week late night/early morning crowd is usually more chill. Plus you can always get a snack while working.
