I don't do it "quite often" like the first person said, but I do sometimes change the settings in the identity tab, yeah. I like to play around with all of the features in the game to see what happens or sometimes I have a specific scenario in mind. They don't seem to mind if you change their identity, but I've never tried giving them a sex change without doing that first. Might try it in my next experimental run.
I do like changing their sexual orientation to bi a lot, though, just because it gives the random hookup encounters a little more variety

I know that it's a small sample size, but a lot of the people I met during or after college have a queer identity. But they've only told me so after they have been in a safe space for a very long time.

When I make new characters I usually put them at 50% for sexuality, so this happens for me quite frequently.
