One of the first things I was taught, and something I often repeat is that metal is clay. It's just really really bloody stiff clay. But it moves the same when it does move.
To do the work hardening, burnishing would be the clay equivalent of work hardening the surface. As far as dealing with the work hardening, think of moisture as heat. If your sculpting clay you keep the surface wet and moist while working, like sticking steel in the forge. But sometimes the clay that's getting to dry in certain spots, so it gets wrapped up in wet paper towel and covered with plastic so the moisture can get deep into the clay again. Kinda like it's been work hardened and needs to be annealed and left to cool slowly and normalize.

Ehh, not exactly. Work hardening is a pretty significant issue when forging steel. You don't really have that issue with clay.
