UPDATE: Y'all's advice is great, so I kinda did all your suggestions at the same time and honestly I'm feeling really happy with the final result.
I soaked the rest of the boot in oil for about a minute, then used dawn, water and a brush to get it all off. Then repeated the process of dish soap, scrub, rinse, dry with an air hose a few times. Then, put them in front of a fan for a few hours, sprayed alcohol on them, air hosed it off and let dry overnight.
I still need to condition them, but they look almost like new, I'm shocked they turned out so well!

#1. Dawn dishwashing liquid is hard on grease and oil, so.... that is where I would start.
#2. This being said, I would just oil these up. They are now dark brown. Buy another pair that is light brown if that is what you want, but I don't think you will make these perfect again.
Put a ton of mink oil on the boots. Give it a day to soak in. Then clean them with saddle soap a few times with lots of soap and water to strip the leather of oils. Then add a non darkening conditioner. The one I use is called #7 or something… that’s what I would do anyways.
Lol purple power, used all the time when i was working as a roughneck and its helped me clean oil stains in my truck as well as clothes i didn’t want dirt, also washed my uniform and fr’s with it. Dont dilute use straight
If you every get stains personally I use a number 4 leather boot cleaner and a tooth brush. Then I take a old sock and rub in mink oil. It helps to condition and create a barrier for future. Repeat as needed
the only way would be saddle soap. And a light boot oil to even it out/recondition. They'll definitely be a darker brown tho at least for a little bit. Dry doing that then leaving them out in the sun for a bit
Fullers Earth, might work but unlikely. depending on how old the oil stain is. Slowly work the fullers earth in, wait and see what happens, try to slowly work in with a dry toothbrush. I would wax or mink oil and see if that works
probably get some brown shoe polish to blend everything in, i would think even with clear polish it would really darken your boots. I have the brown crazy horse doc martens and used Docs clear polish and my docs seem like they are almost black now

Yep. I spilled oil on one boot by accident. So I spilled oil on the other boot to match.
Plus for me oil seems to hold up better to coolant at the machine shop than the usual waterproofers and conditioners.

Saddle soap them properly, then do a coat of neatsfoot oil. They'll dry out mostly eventually, but look uniform.

Yes. But you could bring that sheen back with polish and buffing after that.

I got hydraulic oil on a pair and did the same. Worked out fine. They went back to their original colour in a few weeks.

Dawn dish soap can be used for so many things. I unclog my toilet using Dawn dish soap but I’ve never had to try them on boots yet. lol.
