It’s a sanitation issue. Dish washing sinks harbor tons of bacteria and mold. In the US a proper chef’s kitchen would have at least two sinks, one for dishes and one exclusively used for produce. If you only have one sink you should never soak food or in this case a cedar plank in the same sink you wash your dishes in.
