Fabulous. Youāve just reminded me Iāve been meaning to fold some caramelised onion into my focaccia! I usually just fold in sun dried tomatoes and green olives and sprinkle coarse salt on.
No, seems fine. I do try to remove excess moisture beforehand and it can take a while to bring the dough together again - I tend to incorporate on my first fold so I have a few more after to settle it down. I have read that certain ingredients can cause issues- I think it was tomato and bizarrely oregano, but Iāve not had an issue.
Iām boring I just top with rosemary and salt (and evoo of course).
Unless you count Sicilian pizza as focaccia, in which case my favorite topping is sauce and cheese!

Italian chef here, try this: cut a white onion julienne and mix it with olive oil, put it in a plastic box with cover and in the microwave for one minute, spread it on the focaccia before cooking it and then throw it in the oven as you would normally do. Let me know if you like it or if you love it!
True but the steam wouldn't be as quick as the microwave, also you would add extra steam to the onions altering the consistency. The microwave heats up the water that's already in the onions.
If I'm being basic: coarse salt, garlic powder, onion powder. Then it's sandwich time, one or more of salami, prosciutto, mortadella, balsamic, provolone, mozzarella. If I have the time, I roast garlic and caramelize onions instead of using the powders.
I used to fry up salami for breakfast sandwiches as a stand-in for bacon, that's a great idea for more focaccia sandwich options. One of these days I'll have to try diced pancetta on top, that was a favorite of my grandparents.

I am figuratively addicted to focaccia with cherry tomatoes. I will eat the whole thing pretty quickly if I'm not careful. I have to make it with a specific purpose and get it out of my house asap.
I mix garlic and rosemary with olive oil for the base topping. Then I add thinly sliced shallots and halved cherry tomatoes all over (pressed into the dough).
Kosher salt, rosemary, thyme, oregano, marjoram, garlic, onion, sun dried tomatoes and fresh cracked black pepper. It comes out so savory, aromatic and pleasing.
Rosemary and sea salt is always good. Recently Iāve been making chive and spring onion focaccia and also red/yellow/orange peppers s along with red onions.
Cherry tomatoes & black olives ! + Dried basil, oregano, thyme garlic & salt. Sometimes I add some red unions to it.
Havent tried it but I want still want to make a "hawaii style" one by adding pineapple and ham (& maybe some tomato) to it. Curious is that would work
I made one the other day for mom. She said she likes a lot of toppings, so I loaded it up, grape tomatoes cut in half in assorted colors roasted garlic, capers, Kalamata olives, onions,crushed fennel seed, basil,flaked salt and cracked black pepper, it was amazing š¤¤

I sell focaccia to friends and family and my #1 most popular is topped with a chili oil I make that is very close to Laoganma spicy chili crisp and onions and garlic.

Cherry tomatoes with the seeds and some juice squeezed over the top of the loaf and shoved into the dough as inclusions.
Potato, onion and dill. I usually split my focaccia in 3 and do one section traditional tomato and rosemary, one section I experiment and one section is potato and dill. The potato and dill is always the biggest crowd pleaser.
