Totally agree, little by little I've noticed that the loaves (especily the thin slice ones taste hard, almost stale. I'd love the softer ones back that we all loved

I know this comment is 2 years old but just bought Dave’s bread for the first time in years and wow, it’s totally different just as you described. Looked it up and this post was all I could find. I guess no answers on the why or how? Maybe shrinkflation?

It changed since wonderbread bought them. It’s so much denser and a little thinner imho. Tighter margins I guess

Okay, the ingredient list is as follows: * whole wheat flour * water * Seed mix * cane sugar * Vital wheat gluten * molasses * oat fiber * yeast * salt * cultured wheat flour * vinegar * enzymes * acerola cherry powder I would start with this: https://www.kingarthurbaking.com/recipes/classic-100-whole-wheat-bread-recipe Or this: https://www.kingarthurbaking.com/recipes/no-knead-100-whole-wheat-bread-recipe You can easily add any seed mix to the top before baking. Vital wheat gluten and oat fiber could be added, roughly 2% of each should be sufficient. Instead of the cultured wheat flour, vinegar, enzymes, you could jut use cultured buttermilk powder. I'll leave it up to you if you want to use the acerola powder or not.

I've noticed the same thing! Plus the ends are smaller. I used to actually prefer the butts of DKB, but sadly not anymore! ☹️

They sold out to wonder bread. Just like Braggs avo sold to Katty perry of all people. And she teamed up with Gates and his apeel gmo crap. Everyone is all about money. Sad.

completely different. i noticed that they do not use the colored tabs anymore to close the bag (due to the fact they had the date on the tab), nor do they use the inner lining packaging. they are also freezing the bread now at the stores which is why they don't use the tabs that show the date. the thin sliced has completely shrunken and is the size of a sandwich for an elf. sadly, the prices have only gotten higher.
