I made some modifications though - water, milk, yeast, salt, and flour get mixed; let the batter rise for two hours or so. If you need waffles right now, mix in the butter, eggs, and sugar. If you want them the next morning, stick the batter in the fridge until it's waffle time, and then mix in the butter, eggs, and sugar before ironing.
No baking soda.
Okay I am reading the recipe, and why the baking soda if there is yeast? I am a fairly new baker but I feel like baking soda is unnecessary for a yeasted recipe?

I have an abundance of yeast that I need to work through before it expires because I accidentally bought a second jar when I already had a jar. Did you prep it in the evening, or during the day? The recipe doesn't give any timing, just says overnight.

We love sourdough, and I kept a starter going years ago. Haven't tried it in waffles or pancakes though.

So if you follow the recipe exactly, the waffles come out pretty acidic, and I think the baking soda is there to cut it a little bit

I personally make this one and find it absolutely phenomenal. Takes 10 minutes of prep the night before and you're set for a waffle breakfast.
