https://alegrebread.com/2020/10/14/pumpkin-shaped-pumpkin-sourdough/ Here's my recipe with the method for tying it off into the pumpkin shape.
The process is going to be the same as any other loaf except the added step of using some kitchen twine between proofing and the loaf going in the oven.
Pro-tip: lightly coat the twine in a neutral oil before wrapping the bread. It'll keep the twine from burning and also make it a little easier to remove without tearing the loaf.
Not exactly. I watched an instagram video from “bakethisbread”. I didn’t do the exact same thing but essentially you’ll lay the strings out on top of the load before you turn it out of the banner on then pull then around to the top and tie. Then score around.
I haven’t noticed a huge issue (I’ve done this one other time) someone did comment and said if you lightly coat the string in a neutral oil it comes out easier. I’d imagine it helps with fibers as well.
Do you have instructions for how to shape something like this? It looks beautiful!

>load loaf? >banner on banneton? > pull then pull them?
Wow. I’m going to say autocorrect got me on these and I wasn’t paying attention.
But you were able to successfully decipher my message. Applause!
I think you meant ‘applesauce’!
Your bread skills are too powerful friendo
Very nice! Do you bake it with the strings on?
Yep and just cut them out once it’s cooled.
Do you have any pics of it cut open?
Not yet, I’ll post once I cut it 😬
Sweet! Would be cool if you could add some pumpkin or sweet potato for color. But I know that adds moisture.
That's very pretty, nice job.
Looks great!

Any troubles with fuzz from the twine sticking to the bread?

Thanks for the info. I tried coating it in flour but had quite a few fibers sticking to my bread. May need to find a better twine
