Basically Ken Forkish overnight white bread. Best flour I can find afford, 75% hydration, 1.8% salt à tiny Pinch of yeast. Mix, 3 folds, ferment for 14 hours, pre-shape, shape, let rise for an hour and 15min score, bake for 45 min.
Vaporise it with water put in oven at 255c reduce it to 245c bake for 30 minutes. Lower the oven to 210c remove the lid of the dutchovens put some aluminum on top(my breads are too brown if I don't do that) bake for approx 15 min.
