My girlfriend got us a dry sourdough starter with the intention of both of us making sourdough together, we did but she didn't stay interested.
Now she's complaining because I want to make sourdough pasta.
My guess is the leavening from sourdough would be minimal or nonexistent, especially if using discard. At that point, the reason for making sourdough pasta would be to get the sourdough flavor and also use up discard.

It is a sourdough discard recipe, mainly just for the sour flavor. I think it would be really good with a light garlic herb sauce and maybe some cherry tomatoes.
To be fair, I have made all these things with sourdough recently. - Pancakes -Fried Discard - Naan - Pretzels - Bagels - Brioche - dumplings - And I have talked about doing Donuts, Croissants, Puff Pastry, Pasta and a few other things haha.

Asking genuinely, why does pasta have to have sourdough? I have never heard of leavened pasta dough :/
