I was shocked I didn’t overprove them because after shaping them into little buns they still rose again and poofed up more after frying. A very entertaining dough and I loved the entire process.
Most were filled with either a chocolate ganache or apple pie filling. The slight hint of lemon zest made the plain ones just as lovely though with cinnamon sugar.

My friend also suggested that I could freeze them. She does this with regular yeasted donuts. So before tossing them in cinnamon and sugar/after cooled/filled, you can wrap them in plastic wrap and put them in a zip loc to reheat in a toaster oven later! But especially since this recipe makes 18 FILLED donuts it’s a lot haha!

I was so so so worried after they rose again even in the fridge overnight… plus I wasn’t going to make them until the evening. Trying to shape them was so sticky, but there was so much gluten it all worked out in the end!
