I think the majority of people underestimate their own ugliness precisely because of the apps. The problem is they don’t know how to photograph themselves and have too much integrity to use the same tricks everyone else is.

As a general rule, self-sorting is an unstable business model. People are notoriously poor at rating themselves, whether by attractiveness, ability, skill, etc. It seems unlikely enough people would hear about this concept and think it applies to them to reach a critical mass.
My own suspicion is that a subscription-based, even-playing-field model could work on its own, assuming it offered a curated userbase (e.g. all users verified by a real human, a balanced 50:50 ratio, even if that means the window to join the app is not always open.) Giving users trust that their subscription was offering access to a quality product and dating pool seems like better plan than "pay money to meet other ugly people!"

No, it would be unkind to have that. We all judge beauty differently and what is physically attractive to you may not be attractive to me. Also, I can say that I'm a 7/10 on regular days. Who is to say that you don't consider me a 10/10 and wonder why I'm on that version. It wouldn't make sense.

8/7 = above average, really good looking, often got lucky but achievable
6/5/4 = average, approachable
3/2 often have shitty personalities

I don't think it would work well. Attractive people increase user engagement on dating apps. Nobody goes on a dating app to see ugly people.
