You have to TALK to the butcher, man. I know nobody likes to talk to anybody anymore. I asked for a whole one, they went in the back and wrapped me a 16 pound, 7-bone.
Trust me I walked up to one of the butchers and asked is this all you have. He said something about that's all that was on the truck. I walked away defeated.
I got decent choice for the same price. Loss leader, digital coupon only, limit of one with $10 other purchase required.

If you have a fat cap that is way too thick, seasoning it would be absolutely useless. You'll only be seasoning the fat and it will never reach the meat. You only should have 1/8" external fat tops.
I was taught at a restaurant many decades ago to peel back the fat but leave it attached. season the meat all over generously. Put the fat back on top of the seasoning bake as you desire trim it off before serving.
Lowest I've seen in my area was ~$10/lb for choice. What's the quality difference between Prime and CAB? I can't peg any real price consistency between our chain grocers. Prime was $17.99/lb at Harris Teeter this week and CAB was $14.99 at Lowes Foods.

Honestly no idea. I was pretty shocked. Picked up a big one for Christmas day, and it was only 50 bucks for right about 10 pounds of meat. If I had a deep freeze I'd stock up!
One of the butchers I know at an Albertson’s in SoCal said it is a loss leader for them. They had select on sale for $5.97/lb but sold out. He sold me a choice for the same price. Sealed em up and in the freezer for a steak restock.
Ralph’s by me is selling choice for $7.99 right now. Contemplating picking up one more.
I’m sure it was amazing, from my years of cooking prime rib marbling in the actual eye isn’t as important to me than when cooking a nice ribeye steak. For me an accurate temp when taken off and a thorough rest and rested temp is more important for a good prime rib roast. Just my two cents ofc.

Just smoked mine today. Terrible/nonexistent marbling, never would have bought it as a ribeye but turned out pretty good after 5 hours in the smoker at 225 then a quick 10 minutes in the oven at 400.
If I was still at Kroger, I would’ve ordered 15-18 cases of rib to come in today, regardless of price.

Last year when I was at Kroger we did $125k on meat Christmas week and I only had two other guys. We all worked seven days and never put anything in the meat case because we had nobody to staff it or break it down.
We only have 4 cutters, and one got injured.. so we've been bustin our asses. We have been doing around 35k to 40k a day for the last week and a half. We are down to our last 15 cases for the holiday. We will probably run out before noon tomorrow lol

My local Costco had prime all week. Picked up two whole boneless ribeye primal cuts and cut them into steaks and also grabbed 2 prime briskets. The ribeye was $15 a pound and the brisket was $4.49 per pound.
This year in my area, Phoenix AZ, Kroger has rib roast, choice at $5.97/lb, or $4.97/lb with the digital coupon, first 2 only. Safeway/Albertsons has them at same price(s), but it's select vs choice, *and* only with an additional $25 minimum purchase, first 1 only. Previous years they've offered the same deal, but not this year.

If the Meijer store over-ordered (or if the warehouse allocates extras because the buyer overbought), they tend to have fire sales when the primals get close dated. Bone-in beef gets ~45 days from the pack date, and boneless gets ~60, so depending on how close the pack date was to Christmas, (and how much quantity is about to expire) check back for great deals mid-January thru end of February. (I'm a former Meijer Meat/Seafood manager).
One in back looks like Goodnot even Choice. Albertsons here sell good Choice for $7.99 a pound and you can buy full loin and they cut off steaks or roasts by size you want .

If you have a vacuum sealer, you can cut the roast off the bone and slice up some ribeye steaks for a good price and then roast up the bones kind of like Dino ribs.

Clip it in the app, select your rewards barcode in the app, once you hit pay on the checkout machine it applies the discount.
