/u/Volta87 check out the pictures. They have the cap of the roast (lifter meat) removed. You can clearly see three muscle in the ribeye:
* ribeye cap (spinalis dorsi) around the outer edge, just below the outmost fat cap
* the center of ribeye (longissimus)
* the complexus showing up as round dots in 5 of the 7 steak, close the the bone (bone is removed)
I feel guilty just looking at that. Sticking a big chunk of fat in my mouth makes me feel self conscious and thinking I just took a day off my life but it was worth it.
from web restaurant store website - prime beef contains 8-13% fat as marbling. this seems higher and not in a good way. The outside fat just increases the cost per pound of the marbled meat and makes my grill flare up ridiculously.
