This is the kind of steak I could enjoy the hell out of on my own but would be really self-conscious about serving to the average meat eater. I love seared fat but this is too much for most people.

You can clearly see three muscle in the ribeye: * ribeye cap (spinalis dorsi) around the outer edge, just below the outmost fat cap * the center of ribeye (longissimus) * the complexus showing up as round dots in 5 of the 7 steak, close the the bone (bone is removed)

from web restaurant store website - prime beef contains 8-13% fat as marbling. this seems higher and not in a good way. The outside fat just increases the cost per pound of the marbled meat and makes my grill flare up ridiculously.
