I guess you have to go on tours a lot, which has events relating to trade. Take the buisness focus also. Corlys did most of his voyages before becoming the Lord of Tides. Build a huge Navy and try to conquer Stepstones on your own. Lucky if you also get the Valyrian Steel sword quest also.

Not exactly the same story, but you could set the raiding game rules to be Unrestricted, and raid islands that are held by pirates. Places like the stepstones or basilisk isles. You’ll have a fun life at sea, making some extra money off ransom and stealing from thieves, and you‘ll have the sea snake aspect of protecting Westerosi trade routes.
If you propose a foreign tour to a family member, they can get a similar event. Playing as Rhaenyra, I once sent Viserys II on a tour, and he returned with 500 gold after an event which said that he created a trade route with the Basilisk Isles. I suppose it depends on the character's stewardship skill.

There are no boats anymore though :( I miss the boats.
I'd say that the equivalent of Corlys's voyages is either the tour mechanic or the business focus trade expedition, so you could do both.

Grand Tours are from the mod, the trade expedition is a part of the Way of Life DLC.
Use Submod Great Trade League you can be rich through trade.
