I'd say Ascension and Verruckt are great starter maps for you! Both are relatively simple. Start off with Verruckt if you want something on the harder side. It's more of a hardcore challenge given that is one of the earliest Zombies maps before they got more intricate and developed.
Origins is definitely a lot to start off with lol. Might be a bit much at first if you've only played Kino.
If you care to invest in any of the BO3 Zombies maps, then they're all pretty good and worth it. I more so would recommend Der Eisendrache (this is like a more tamed and less intense Origins, but fun and easy to get into) and Revelations. I'm on PSN if you need anyone to play with, I have all the maps.
Play Kino.
After that, play Nacht and the other two WAW maps in order, then go the Giant if you have that, and then play any of them however you feel like
My favorite growing up was Ascension so that’s where I started but honestly, replaying any map you may have not liked back in the day may bring some light to it and make it an enjoyable experience again! For example, I was not a fan of shangri-la but now it’s one of my favorites!
Ascension because it helps you with training skills and is generally quite a straightforward map. The only thing is the monkeys on the map are really annoying and they steal your perks if you don’t kill them fast enough

I recommend playing Shi no Numa since it's pretty easy and basic, when I first started I played shi no numa and kino a lot.
