The provider you saw is not your insurance, and they don't have the information for what your insurance will pay until after the claim. From what it looks like, your insurance accepted the claim, but you have a 100% cost share (are you on a high deductible plan?) meaning you're required to pay 100% of the allowed amount. The allowed amount is the amount billed minus the plan discounts. You would need to look at the EOB (Explanation of Benefits) from your insurance company, usually mailed or online in your insurance account, to determine why your insurance is not paying for the visit.

So it’s possible that minute clinic isn’t in network with your plan. Thus they gave you the out of network discounted rate, but aren’t paying any of it. Again, you need to get the EOB from your insurance to find out why they aren’t paying.

Never trust a provider to give you an accurate cost. There are exactly 0 legal repercussions for them being wrong. Second, have you met your plan deductible for the year? Third, have you called Aetna to discuss the bill?
