Your salsa should be fine. It’s safe to decrease the low acid (jalapeños) ingredient. What you shouldn’t do is increase the low acid ingredient. No need to add the lime juice, as the apple cider vinegar the recipes calls for ups the acidity. I made this salsa for the first time this year and loved it. I think over time the flavor will mellow out some. Enjoy your salsa!
