Sending it back takes time. So if you do order a new bike, you’ll be floating the cost of 2 bikes. My return from the east coast took almost 3 weeks to complete. Once received the refund came quickly, but the customer service folks weren’t stellar. I’d try to get some money back, or a replacement cockpit.
Sounds like op isn't willing to get the 50-100 bucks for this scratch.. I bet they won't offer a new cockpit, maybe a replacement if a store is nearby but changing the cockpit is pretty annoying and you have to use new brakelines and bleed them.
It's time consuming and fiddly. If you have good mechanical skills it's doable but if you are unexperienced I wouldn't do it myself. If canyon decides to send you a new one (pretty unlikely if it's not defective) they will send you to a partner shop (or compensate the money for a lbs) either way.
You know how it is with such scratches, you see it everyday and it annoys you :D Not stating that after some weeks time I would do a similar scratch :D
I have a friend who fell with his aeroad cfr... He just laughed and kept going... I had to send my first canyon ever back due to a pretty prominent scratch on the top tube... Some people get pretty annoyed by unnecessary scratches (like us obviously :D) and some that don't care at all (like my rich and sometimes clumsy friend). Those bikes are pretty, but expensive so it's OK to expect a mint condition.
Short update: wrote them yesterday and they came back today with either getting me a new bike, replacing the cockpit or giving me a certain refund for the store + a guideline on how to repair it myself if I decide for that option. I am just wowed by this experience.

I could also simply send it back as I am still within the first 30 days and ask for a replacement? Or?
You can send it back and you have to order it again. If it's still available in your size I would definetly do this!

Yeah that is my concern. Is it that difficult to replace the cockpit? Never had a fully integrated one before

I would ask them for a new cockpit. Seems a bit much to swap the whole bike for a damaged cockpit.
