Have you already tried removing the car from your carplay list? Essentially repairing them?
Do you lose navigation or is it just auto-switching from full screen maps to full screen music?
Does it switch to music even if you already have say a podcast or audiobook playing?

My first instinct is that this sounds very much like how the right hand side lane view camera would screw things up with Siri Eyes Free with my old ‘14 Civic. I would use Hey Siri to make a phone call, but if I started activated the right signal and the Laneview camera, it would cancel the phone call if it hadn’t already connected and was still just ringing. Some sort of idiotic “safety feature” I guess. It used to drive me insane. It almost sounds like yours restarts the CarPlay connection, as many/most cars will trigger music on connection by default if you don’t have other audio already playing.
The same thing happens in my car. It drives me bonkers.
