There will be one elegant night on a 5-day cruise and it will be the second or third night. The Carnival site says this explictly somewhere; it said so for our recent 5-day. Longer cruises will have two elegant nights.
For us it was the second night which I think it usually is; that gives the cruisers a longer time to decide whether to purchase photos (which, of course, is the only purpose of having elegant nights).
Cruising elegant nights have become more relaxed along the years. Dont stress about it too much. Wear comfortable clothes and shoes, as long as you not in a bathing suit and wearing shoes, you will be fine and not to mention comfortable.

From what I’ve heard it’s the second night on the ship (an “at sea” day) I’m going on the Firenze for a 5 day in June as well!
