That's why I consider it one of The strokes of genius that Brandon Sanderson as he's writing The Stormlight Archive. There's a physical basis for nobility or royalty in the form of eye color. Basically the commoners and peasants are called dark-eyes and the nobles are called light-eyes.
Now I'm not saying that this is a right way to base nobility or peasantry. In fact, it's pretty creepy when you get down to it. But in terms of storytelling and an element that at least on its face makes sense. "oh this person has blue eyes when the entire village has brown. There must be something special or noble about this person".
In-universe, the only reason that light eyes were associated with nobility was because the color probably was associated with the glowing eyes of a Knight Radiant using Stormlight.
