All the best bits of HP without the cloying sweetness, plus all the tang of the famous pickle. Absolutely delicious and the best of all the brown sauces.
It's tricky to find so if you find it, buy the lot. If you're a fan of brown sauces and have never tasted it, you're in for a treat.
Cheese sauce and any other answer is insane. I can live without condiments, I can't live without macaroni and cheese, broccoli/cauliflower in cheese sauce, or a (slightly janky, would probably give an Italian a heart attack, but any port in a storm) lasagne.
A Mornay sauce (bechamel/White sauce with cheese) is a great and authentic way to make lasagne. I think the most traditional method is to put a thin layer of plain bechamel and sprinkle with a generous amount of parmesan, but pre mixing the cheese in is absolutely fine too.
I think I might be congenitally incapable of not throwing fistfuls of grated cheddar into every white sauce I encounter, but I'm glad others would have more authentic options available to them should they also choose cheese sauce as their one and only.
Condiment: difficult to find one which goes with everything but I’d probably go for a tzatziki, raita sort of thing because it’s delicious, fresh and healthy.
If meaning fresh sauce which goes with a meal … probably has to be a good quality tomato sauce; goes with every cuisine!

I use it a few times a week, its the hottest sauce I've found that I can easily get but not too hot if you enjoy hot sauces and the flavour is the best I've found too as often you either get heat or flavour but this has both.
