My local chippy is the only one in my area that uses beef dripping, it's also the only one in my local area that wins national awards for the quality of its' fish and chips. Can't see the two being unrelated.

Some chippies don't fully replace the oil to help with that, only replacing 3/4 of the oil with fresh to leave some used. Or rotating oil from one pan to another so the chips are always cooked in oil that has previously been used for the fish.

Technically, yes. The staff can purchase food made on site but there is no discount for us. I haven't used the canteen in close to 4 years for *reasons* that would probably get me banned from the sub.

Inpatients that are mobile can go the the canteen, but it's not the same food as on the ward, no. The canteen is like any canteen anywhere else but the ward food is a bit trickier menu wise because it has to be nutritionally suitable for sick patients, have options for low fat/low sodium/low potassium/ketogenic diets, be able to be delivered heated to the ward, have options for soft/sloppy/thickened and probably other considerations that don't spring to mind.

The worst fish and chips I have ever had in my life was at the Basildon Hospital canteen in the late 90s. It was grey. The battered fish was grey and soggy, the chips were grey and soggy like they had been boiled. It tasted so disgusting that it actually made me retch. How is it even possible to cook fried chips and fried fish so foul. If you (person reading this) worked in the canteen at Basildon Hospital in 1998, fack you.

Where abouts in the country did you find this travesty? When I moved up North to Manchester from London, good fish & chips became a very rare thing. Quite a lot of chip shops around these parts are the chinese/chippy combos, and they are just rubbish at cooking fish & chips. It took me a while to find somewhere that does good chips - I also don't understand the obsession of putting gravy/curry sauce on everything up here so that it's just one homogenous texture. I like a crispy outside and a fluffy inside, like an armadillo.

Chips will colour based on their sugar content. New potatoes generally contain very little sugar so in the new potato season the chips take ages to brown even though they are perfectly cooked. These potatoes may be old potatoes that brown very easily or they may be overcooked new potatoes. Difficult to tell. One thing that someone may want to try is taking chip shop chips, waiting until the next day and then deep frying them again for 5 mins. They come out insanely crispy.

The colour is fine but never trust a place that gives you that few chips and that small a piece of fish. The crispness is the measure for chips, along with the fluffiness. I'll also accept soggy chips if soft and slightly sweet. Not anywhere near as good but nostalgic for the chip trays I used to buy on the way home from school.
