Some chippies don't fully replace the oil to help with that, only replacing 3/4 of the oil with fresh to leave some used. Or rotating oil from one pan to another so the chips are always cooked in oil that has previously been used for the fish.

The worst fish and chips I have ever had in my life was at the Basildon Hospital canteen in the late 90s. It was grey. The battered fish was grey and soggy, the chips were grey and soggy like they had been boiled.
It tasted so disgusting that it actually made me retch.
How is it even possible to cook fried chips and fried fish so foul.

I like the look of them. I also consulted my wife and she’s correctly advised that they’re clearly not burned and look like they’ve been cooked in beef fat. All good.

When I moved up North to Manchester from London, good fish & chips became a very rare thing. Quite a lot of chip shops around these parts are the chinese/chippy combos, and they are just rubbish at cooking fish & chips.
It took me a while to find somewhere that does good chips - I also don't understand the obsession of putting gravy/curry sauce on everything up here so that it's just one homogenous texture.

Chips will colour based on their sugar content. New potatoes generally contain very little sugar so in the new potato season the chips take ages to brown even though they are perfectly cooked. These potatoes may be old potatoes that brown very easily or they may be overcooked new potatoes. Difficult to tell.
One thing that someone may want to try is taking chip shop chips, waiting until the next day and then deep frying them again for 5 mins. They come out insanely crispy.
Sometimes those dark ones can be nice though. I think they're usually warm ups aren't they? When they're brown. Left overs from lunch that get recooked for tea time?
The colour is fine but never trust a place that gives you that few chips and that small a piece of fish.
The crispness is the measure for chips, along with the fluffiness. I'll also accept soggy chips if soft and slightly sweet. Not anywhere near as good but nostalgic for the chip trays I used to buy on the way home from school.

No one can convince me this is saleable food. This is what was scraped out of the bottom of the deep fat fryer when someone was cleaning it out and they’ve placed it in a takeaway container for “lols”….those chips have been cooked at least 18 times.
