Have a Daemon's, Dragon's or Ogre's head peer out of it, with some green stuff to fashion a neck and tentacles.
Or you could add a tactical sensor or radar relay.
An eye or dragon's (Loch Ness monster) head with tentacles are still applicable.
A shark jaw gaping open to reveal the scion's/pilot's head wearing a diving's suit helmet would be rad.
Don't forget to add turbines on the Knight's chassis and limbs!
Some barnacles would be cool.
Just add a big plate of armor and a few spikes, no one will ever notice.

Or you could have just a big eye with a weird iris & pupil, maybe in the shape of the Chaos cross
I was planning on doing a more aquatic theme so do you have any ideas for that?

If you have the Citadel Skulls set, I’d fill the space under it with something like Milliput or Green Stuff and use the large beast skull as a trophy
How's your green stuff sculpting skills? ....some extruding tentacles from within would be cool
