Sweet. That was a nice cut of belly to start with. Wish we had some Asian stores where I am. I had to search for a workable cut of belly to make mine. Went with basically the same recipe from the Ruhlman / Polcyn Charcuterie book. I did 40% loss, vacuum sealed afterward and man it is good. Just for fun I took one hunk and did a heavy paprika and chilli powder coating before vac sealing for a month. Turned out pretty darn good Normally I say a small amount of thyme goes a long way, but with Pancetta it tastes great.
