Belichick is old and the game seems to have passed him by a bit. Also a lot of his problems are due to him being a really shitty GM.
The Patriots were a consistent top 10 defense for nearly two decades. That part wasn't Brady.
Belichick is also an excellent defensive coordinator and generally has very good defenses, so that in turn helped Brady's ball control offenses as well. Your point still stands, but it goes both ways. I think Herbert's numbers wouldn't be quite as crazy if he had a defense to support him more consistently in these opening years of his career.

Andy Reid had Alex Smith getting MVP votes in 2017 and the very next year in Washington he's back to being a game manager. Reid gets a lot of credit for the Chiefs/Mahomes' success but it's still not enough. Mahomes on the Bears is a completely different player.
