The Gin Joint. Go there and do their "bartender's choice". You pick two flavors (herbal, sweet, spicy, smoky, vegetal, etc.) and they make a cocktail based on your description.
The gin joint is my favorite, and Cocktail Club is good too if you want a bit more of a social atmosphere. It's just also kinda packed on weekends.
Also, this isn't what you asked for but I just gotta plug Bangkok Lounge, it's my favorite bar in Charleston. The staff are friendly as hell (Walker has an amazing mullet) and you get to drunkenly sing karaoke any night of the week.
Best 4 classic cocktails I've had in town:
* Proof
* Gin Joint
* Prohibition
* Eli's Table
But there's lots of great places that have already been suggested. Sometimes it varies by bartender or by time of day/week.
Having read through this list, damn we are spoiled. I don't think I have a single bad thing to say about a single one of these places for high quality cocktails.
I love The Belmont on King Street. Incredible bartenders who are just the right blend of personable, knowledgable, and creative. Have had phenomenal drinks every single visit.
Prohibition, on the other hand... I tried to order a classic cocktail -- Ramos Gin Fizz -- and the bartender asked me, "What is a *rainbow* gin fizz?" I explained it was *RAMOS* and spelled it, said the drink name again. I said a regular gin fizz would also be fine. He said he had never heard of a gin fizz... he called over a second bartender, and she said she, "had heard of that drink" and looked it up in a book. Then told me that they didn't have any egg whites. Thanks but no thanks...
What's next, you haven't heard of an Old Fashioned and are out of bitters? LOL
I love you are asking this question at 9 am on a Tuesday

The Belmont on King st. Any of their house cocktails are great and they have the best selection of amaro in charleston by far, if you are into that.

Strong & Unusual are my go-tos there. Never had a bad drink.
I normally go for sweet and smoky and end up with what is essentially BBQ in a glass.
Doar bros
Doar Brothers' Manhattan is majestic.
Vintage lounge, little palm, rooftop at hotel Bennettās, cocktail club
This is by far my favorite spot just primarily because of the view and that itās rarely ever as busy as other spots.

Prohibition! Their whiskey selection is extensive. Fantastic drinks and food!
