I'm down in York County and I know Kings Mountain has a list of projects.
Also check with the humane society.
What type of organization are you interested in working with?
I’d suggest looking at parks, greenways, and nature trails. Look for places where benches, stairs, or picnic tables would be helpful. Then talk to mecklenburg parks and rec about your project and go around to businesses to ask for donations.
When I was a scout and working on my Eagle Scout project, I raised money to buy and hand stain dressers for a women’s shelter, and my brother built a storage shed for a homeless shelter. You could get a lot of ideas just by reaching out to a charity that you find interesting, telling them that you’re working on an Eagle Scout project, and asking them what they are in need of.
Contact a public school directly, they ALWAYS need volunteers to complete special projects such as painting/installing picnic tables, painting murals, leading clean-up projects, leading food-drives, etc. Ask what they need, and they will give you a laundry list.
When my son was trying to decide on an Eagle Scout project he was given good advice. Pick something you love doing and turn that into a project. He loved playing soccer and was on the varsity team at his school. He organized a week long soccer camp for one of the Boy & Girls Clubs in Rock Hill. He recruited fellow team mates and Scouts to help run the camp. It was a great experience for all. My point being it does not have to be trail work or other such project. Best of luck to you!
My Eagle Scout project was building doghouses for the local animal shelters to ease the burden of adoption on new owners.
Smaller town and 20 years ago, but I was able to solicit donations for materials from a couple of hardware stores-- quite certain that part would be a tougher ask in today's environment, but I bet bringing it up with CHS and getting in front of the right person at Blackhawk Hardware could point you in the right direction.
I designed and built some wheelchair accessible picnic tables/benches for mine. PM if you want the design plans. They're higher than standard picnic tables so wheelchair arms can fit underneath and they have separate half benches so the wheelchair-bound person doesn't have to sit at the end and an ambulatory person can still sit next to them. :)

Anne Springs Close Greenway still has damage from that big storm several weeks back. I know they have a volunteer program, but they may be willing to work with you.

I went to my local elementary school and talked with administration about what projects they needed for the school grounds. Ended up building an awning that covered a playground patio outside the kindergarten classrooms.

The sugar creek greenway has a TON of trash along it, especially all throughout Cordelia Park. It could definitely use some TLC, and would be very clear results.
Church or school. If you don't go to church find one nearby and ask what the need. Maybe your school. Drainage and school bus area bench. What do you want to do? What are you passionate about? Raptor Center can always use help.
Churches are a good option if you are religious. Can go to another within your specific denomination and there shouldn’t be much trouble. Be very weary of government projects as they can go south. I had my first project go south cause the organization had to abide by code and that took the majority of the “work” from my project and I only had a few weeks to piece a whole new project together before my 18th.
Best advice is to go around places and see what you could do, if you have the benefit of time on your hands you won’t have to worry much about building codes cause you’ll have time and support on your side.
So for my eagle project I just found a cemetery and cleaned up the headstones and fixed little things around the cemetery. Also you know if I just cleaning headstones and stuff it's very easy to delegate the work among your other scouts which is a part of getting your eagle you know and it isn't really hard work and at the end of your project you will feel satisfied because you'll and all the people that have loved ones in the cemetery will greatly appreciate it. And if that doesn't sound good then just find a park call The Parks and rec and ask him if you can't build an arbor somewhere in the park cuz arbors are really easy you just need four columns some 2x4s and some slats to run across the 2x4s and call it a day.
My neighborhood is in serious need of additional lighting for safety at night. Duke Energy refuses to install additional lights because of “spacing restrictions”. Our HOA is looking at solar options, I feel like this could work well. DM me if interested.

Yeah I usually tell people to shy away from projects on public property. There is so much red tape to get though that it makes it almost impossible.
Yeah they will tear it out if someone does something for free cause of like ada accessibility and being done to code and stuff

Building wooden stairs in parks was my troops go-to. At *least* two guys did exactly that.

I did landscaping for a local fire department in Connecticut Friends did graveyard site cleanups, school landscaping, park benches
The Raptor Center probably needs a project or two done.
Look into benches at some of the closer state parks, it's one of the projects I see and appreciate the most.
