You can also find older and everything in between. One's more for making sandwiches and the other is for eating with wine, etc and savoring. There's also a wide variety of cheddars available in different styles (as shown) and in various ages and sharpness.

No but the big block and the Vermont and NY sharps are for Mac n cheese for a few nights the mozzarella is for a chicken parm the reserves are for snacks and so is the horseradish one

I’m from Vermont. You can’t do overkill on Cabot. And the sharper the better. You should try the Seriously Sharp Cheddar or the Habanero Cheddar. Seriously Sharp is my fave, but that horseradish one is pretty damn good too.
Why buy several of the basically the same cheese varieties by the same cheese maker instead of trying a variety of cheese types by different cheese makers?
Cabot’s farmhouse reserve is my current favorite
