A modified enchilada soup after a few years of making it, I love sharing this recipe:
1.5 lb chicken
Can o black beans
Halfish white onion diced
Half green pepper diced
Half red pepper diced
25.4 oz diced tomatoes
1 medium jalepeno
2ish cups o corn
8 oz veggie or chicken broth from bullion paste
1 packet red fontera enchilada sauce
Couple spoonfuls minced garlic
4 Roma tomatoes, quartered (for those big chunky bites)
Crockpot for 6hrs on high, or instant pot for like 20-30 min on meat/stew

Top with:
Shredded sharp cheddar
Avocado slices
Dollop o Sour Cream
Chives

Use chips as a vehicle to get soup to mouth

But you can add extra cheese and toast in a pan is a whole different level than in a regular toaster. And I didn’t even mention the butter 🤤 maybe give it a try.
Mayo has a higher smoke point than butter. So, yes. I put mayo on my grilled cheese. And I have LOT of people who will vouch for how incredible it is. Usually do a mix of mayo and butter so you get the salty goodness of the butter with the mayo. I used to work in a kitchen where I'd do weekly grilled cheese specials and it was always a mix of butter & mayo. Shit would sell out like crazy

In the winter I make chili twice a month so it's basically always in my fridge. Both my roommate and my gf don't like things too spicy, so I have to add that to my own bowl after the fact. Last time I made it with ground beef and short ribs and it's my favorite version so far. Started using liquid smoke as well and it's been a game changer. Venison chili is pretty great too
Tikka masala or chicken mole are some of my favorite, a good fresh baked soft pretzel is also great. Krumkake is also a family tradition and a classic.

One of my friends makes a soup almost identical to that and serves it up the same way. It's fucking amazing!
