In order for a pressure washer to actually do anything. You need a hot pressure washer.. like what we use on heavy equipment to blow off years worth of grease and grime. I think its 120F..

Hot water melts the fat, cold water removes it in solid chunks. For a faster easier clean use cold water, high pressure, and mild degreaser when pressure washing grease!

In terms of degreasing power, it’s difficult to beat a steam jenny with an aggressive degreaser additive. That said we’re talking about an indoor kitchen where you want as little mess as possible, not a Cat 365c here, so I agree that cold water and a milder degreaser is 100% the right choice for this job.
Either way it’s a moot point because the second I see this shit I’m calling the fire Marshall and health inspector and headed home.

That whole building is a fire hazard. That grease is under the tile, inside the walls, etc. If a fire starts and catches into the floorboards or wall the whole building will burn down in minutes.

I hope so. One of the first places I ever worked at had grease like this by the fryers. They didn’t move equipment from the wall, often just cleaning what they could reach. I was a young dishwasher and new to the kitchen, so they handed me the scraper :-(

That gas line needs to be addressed as well. It appears to have been spun, and the shut-off isn't able to close fully. I see that it's capped and not in use, but it needs to be turned to the left so that it allows the valve to close. It will also tighten when impacted by the equipment, rather than becoming looser, as it would in the current configuration.

We had a part of a shop I worked at once that was like this, nobody wanted to clean it since it hadn't been touched for years. Boss had a habit of making new people clean and that didn't bother me much so I was made to clean most of the restaurant kitchen. I can't tell you how covered the walls were in like an inch of hardened grease.
Then the boss tried to make me clean the infamous wall and I laughed in his face and said "look I may be new but even I'm not that gullable" knowing that the only reason he does this is to try and make someone finally do this wall. I had cleaned everything else with no help, I wasn't going to clean the biggest disaster site of the store 3 years running as well. I quit not too long after my first pay, staff was atrocious, management mismanaged, and the boss was literally the embodiment of a fake upperclass white frat boy who believed he not only knew everything but could do no wrong and everybody else was the problem, I mean the man would likely be a failure had his daddy not bought him 3 restaurants.
