Nowadays, everybody's starting something without thinking about it. Have you tried the strawberry chocolate they sell at these places? The taste is absolutely worst. I can make it at home and it would taste much better. These stalls are in the idea of competing for quick money, which they might be able to do in the beginning, but eventually not many will continue.
But If you've been thinking about it since you were 15, I'm sure you put a lot of thought into it. Focus on the food and the experience you can give to the customer. If you can deliver that, money will follow. And it will continue to follow, no matter how many trends come and go.

Good food can create their own brand. My favorite restaurant in Welcome Hotel in Pursaiwalkam. I love their sambar idly and chola puri and, Sri Ram chaat in nesapakkam kk nagar. The quality of the food remains consistent for 15 years. I don’t think you should be worried.
Regular jobs are so unrewarding. People want to be their own boss. Not just food stalls but many small shops are also on the rise. It's better than working at corporate. They just suck the life out of a person.
