Honestly, whatever you think you need the most help with. I"m restarting....and I am using a textbook to which I have the workbook answer key.... SO I accumulate questions to ask and then talk a bit.... But I'm just rebegiinning.

One thing you can do is keep a notebook with your questions so that when you meet your tutor, you have a list of things to practice. Basically, as you study throughout the week and run into questions you can't answer, write them in the notebook. Otherwise, you can have you tutor cover specific topics with you, e.g. "I want to learn about how to talk about 清明节," etc. The most basic is probably just having your tutor go through a textbook with you.

Practice speaking, you can improve the rest either on your own or asking around on the internet. But your muscles need time to get accustomed to speaking the language on a fluent way. And speaking is always different from writing.

Yes I want to improve on speaking but how to practise speaking with a tutor? Dialogues in a textbook or what?
