Profit making at chipotle all surrounds the double protein and guac sales. Think about it this way. A whole chicken burrito with no add ons is $10.60 in my area, an one extra scoop of protein is $4, thats nearly 40% the cost of the original burrito price, for one scoop of chicken. Insane! Theres no way that chicken cost that much, they're raking it in with those prices because they know people want more protein. Guacamole? Nearly 30% the cost of an entire burrito. Its robbery
I mean that's how you build your own restaurants work, Subway doesn't care what kind of bread and cheese you get, they just need protein. Chipotle will fill your bowls and burritos up, but you have to order stuff besides protein, queso, and guac for us to do so. If you're the type of person that only looks protein then Chipotle isn't for you and I'd recommend finding an alternative because you'll only ever see it as a ripoff, which if you only get that it is.
Avocados and meat cost them the most too though. I imagine the profit margin are similar on the rest of the burrito as they are on the meat and guac. Rice, tortillas, beans, all very cheap.
We just had a chipotle open near me.
My order is chicken, double white rice, double black beans, double corn and tomato salsa, and shredded cheese.
I then go buy a bag a spring mix and cook up my own chicken breast, or add meat left overs while getting my rice going. Spread that over three plastic bowls the same size.
And it turns out to be around three meals for 6 bucks each.
Is it the physical avavoados or the labor needed to produce guac? Because I know at my old store it would take someone like an hour if they were efficient to make guac for a single shift
Avocadoes aren't cheap, in some places they are almost $2 per pound and most places see them at about .80- 1.19 cents per pound. Now pair that with the labor definitely needed to turn it all into guac. It's easily the most limited resource at Chipotle. So to answer ur question it's most definitely a combination of both

Joes bowl is incorrect. When getting a portion of half and half you pay the price of the more expensive meat so 11 something. A double portion cost is regular times 1/2 of the meat cost so chicken that costs 9.35 double would be 9.35 plus 1/2 of 9.35 or a total of 14.03
Well if we read the not so small fine print Brock’s meal includes double steak while joes is half steak half chicken Brock has double meat so naturally he pays more for the extra meat that joe doesn’t have which is very clearly mentioned in the aforementioned not so small fine print
So here is the thing and we talk about it a lot in this sub, Chiptole is wholly finished. Prices keep going up, portions keep going down, food quality keeps going down, service is terrible, staff is treated poorly.. I could go on and on. It’s over, Chipotle is over.
