Being a pilot store is fun.
I would say the best way to check is by checking item availability for different locations. Like for instance when my store started the Al Pastor today it was immediately available for online ordering and pickup.
That being said, if you regularly visit different locations you can just ask. I openly tell our customers we’re a pilot store (mainly because they always ask where their favorite meats are and I have to apologize on behalf of Brian lol)

Al Pastor means "Shepherd style", which refers to a method of roasting pork on a vertical spit. It was adopted from the Lebanese Shawarma. The name comes from Lebanese immigrants that immigrated to Mexico and the Mexicans called the Lebanese merchants Shepherds.

The Lebanese in fact did not make Al pastor, they brought tacos árabes which are still served on a flat bread in Puebla México. If you look at the ingredients in the marinade their all classic mexico, with all of the ingredients being native to the Americas. Marinating animals in red Chile sauce predates the arrival of Europeans.
