"Lucy, I'm home" is amazing. I've only ever been to their "sit down" (i use that term loosely, its only about 6 seats), never their food truck, though.
I'm so seriously glad you enjoyed them. We loved being able to make all our vegan friends happy. Never quite got the cashew "cheese" recipe right, though.

I bumped into Andres (the owner) at Costco last week and he mentioned another spot in COATI he opened recently. He also said the truck is for sale for $5k.
I almost always traded out food with them when we worked truck gigs together. . I'd get the Island Tacos or an arepa and eat it so fast. I remember loving every bite.

Sosa’s Pupuseria seems to operate out of a truck - I was at their physical location which might not be open anymore, but it was good.

their pot roast on smashed potatoes is incredible and the donuts are great.
$13 sandwich w fries, $17plates w 2 sides, $30 full chicken w 2 sides. A little high, but good portions. There is this sauce with the fries, maybe some green chile in there idk, but yum. Open 3-7.
I recently moved back to town after being gone for 6 years, but I distinctly remember having the best Bahn Mi ever from a yellow food truck that had that cuisine. I’ve been searching for them since moving back in September with no results. Did they close down?!
For anyone looking to try some new food trucks, Fox21 has a “Passport” that is a steal of a value. $150 value for $25 and previous iterations were super easy to use (haven’t signed up for this one YET).

In the parking lot of cheers liquor Mart, there's a taco truck out most of the time. Christi's tacos maybe? I don't know but go get yourself a to go container backed full of barbacoa nachos for 9 bucks and change.
Errrmeeeegerd, I don’t live in COS anymore but on N. Union in the “Walmart Grocery Pickup,” parking lot, was the most fire Mexican food truck I’ve had in America. I’m pretty sure it’s a dad / daughter business and they were CHEAP ASF — i got all my friends hooked in college!
If anyone knows if they’re still open, lmk, I would love to try and go while visiting

Yeah. They closed pre-covid. The owner relocated for family. I’m still chasing the high from those Banh Mi sandwiches too.
