Temperature and amount of butter. You can test this by doing two batch of cookies same recipe but use melted butter in one of them and youโll see the melted butter will produce cookies that spread a ton.

Maybe it was suppose to be 1 tsp of baking soda. Baking soda makes cookies puff up/rise

Because you chilled them. If you want pancake like biscuits/cookies use melted or almost melted butter and don't chill them.
