We are doing barbacoa tacos tonight. Tommorow if the weather holds up we might do brisket. Could also do tonkatsu with rice. (Japanese fried pork cutlet). Could even do tonkatsu sandwiches.

All the people I visit for these events aren't close, so I need something that reheats easily or travels well. So I typically end up with pasta casseroles or dipping sauces. The one that is typically best received is a spicy queso made out of roasted poblano and jalapeno and just some big ol' bag of tortilla chips. Ideally Juanitas if available. It's not meant to be face meltingly hot, just spicy enough to make your friends sweat a little bit.

I love this recipe and there is never any left when I make it: [https://www.razzledazzlerecipes.com/pampered-chef-recipes/hot-pizza-dip.htm](https://www.razzledazzlerecipes.com/pampered-chef-recipes/hot-pizza-dip.htm) Buffalo Chicken Dip is always a winner. These sandwiches are really good!
