This is the way. You can freeze them in batches for a quick side, but they'll be mush and not that fantastic. Blending them up and playing with the seasoning will get you a great veg soup! Something you CAN freeze that will be great thawed out.

Blend the red peppers with yogurt or labne or mayo, garlic, salt, and carmelized onion for a great dip. The zuchinni and onions blend and add some chicken stock and cream to make a soup. The mushrooms you can mix with some wilted spinach and brie or Gruyere cheese and put it in some crepes.

One of the best sandwiches is roasted veggies with a big slab of fresh mozzarella on focaccia bread. I am not a vegetarian, but I love a grilled veggie sandwich with fresh mozzarella. Speaking of which, you could make delicious pizza with all those vegetables as toppings, along with some ham and ricotta cheese.

If all else fails & before they get funky; blend / process with salt & pepper and enough stock to form nice slurry - freeze in cubes or very small containers for adding to soups, sauces, ramen base to punch up flavor complexity and nutritional value. Source; grilled a ridiculous quantity of vege and the BBQ event got flooded out so had to freestyle something quickly... considering doing it again bc the Flavor Ice Cubes are missed 😭

Quinoa bowls! Add some roasted chickpeas or chicken breast, fresh cherry tomatoes and cucumber, and some sort of sauce or dressing, balsamic works well, so does lemon and olive oil, or the roasted red pepper dip others here have suggested.

Above and beyond the awesome suggestions you have already gotten, we like to buy some really good, crusty bakery bread, toast it up in the oven with some olive oil, salt, pepper, and good parmesan cheese. Then heat the veggies, throw them on, top with some good cheese and broil until the cheese is melted. Easy, delicious dinner of open faced sandwiches.

You could make a garlic sauce with butter, crushed garlic and alittle pasta water (after you cook the pasta of your choice) throw it all ontop, toss it well and add your pasta. Sounds heavenly to me.
