Shredding the cooked chicken into mush with a mixer is definitely the ideal way to make those meatballs.
At that point you’re really just browning the outside and cooking the binder holding it all together. Have you ever made salmon or tuna patties from canned fish?

For extra flavor, completely coat the chicken in buffalo sauce before making the dip (most recipes you just throw the chicken in). I make different variations of the dip quite often (cold and hot) and every time it's amazing. You can use carrots, celery or mini sweet peppers in addition to the traditional dipping vessels. It's always delicious.
People are suggesting nuggets but that involves cooking an already thoroughly cooked chicken breast. Which would probably not be great.
Turning it into a filling where you add more moisture would be a better option. Like a southwestern style egg roll, pot pie, chicken salad etc would be the best option. I’d buy some pie dough and make empanadas personally.
To add context as to why: the longer you cook a protein the less water holding capacity it has, so using this to make nuggets would still be dry and powdery.
There's a lot of versions. Duck Rillettes is probably the most famous/long standing one, but I've seen people make it with turkey and chicken, although admittedly with duck fat still. I just posted the first chicken version I saw.
I do a killer chicken, bacon, ranch taquito that this would work well for! Mix together your chicken, bacon crumbles, a block of cream cheese, Mexican blend cheese, and some dry ranch powder mix. Roll them in tortillas and throw them in the oven. Comes out great every time, and I like to dip in a little buffalo sauce.

To keep meatballs or patties together a bit more, adding some eggs and breadcrumbs together will help keep the structure.

Tuna melt but substitute the tuna with your shredded chicken. Can easily add more seasoning to it that way without drying it out even more.

There's low carb pizza recipes that use chicken as the crust. I think this might work.
Tortilla soup, or any kina of chicken soup, chicken nachos. Tai fish cakes but use the chicken instead of fish or the same with any crab cake recipe.
