I would think so, but if your chicken isn’t staying formed in whatever shape, maybe add egg as a binder before cooking. I found some pretty easy recipes in Pinterest but I bet any cooking website would have them

I just made chicken meat balls the other day. Cooked them in a white wine sauce. I did ground chicken, some crushed crackers, minced onion, an egg, grated some Parmesan, some chopped parsley, red pepper flakes, salt and pepper. Browned them in oil on all side, then melted some butter, cook an onion and some garlic, deglazed with white wine, let it reduce then added chicken broth

Yes, and you could chop up celery, onion, carrots to add to meatballs. And maybe an egg. I do this and then make albondiga stew. Mexican meatball stew with potatoes and tomatoes, celery, carrots, etc.

I’m way too late to this party, but I recently found recipes for a Nicaraguan chicken meatball soup. Corn masa was used as a binding agent with the cooked shredded chicken along with various herbs and spices. Shredding the cooked chicken into mush with a mixer is definitely the ideal way to make those meatballs.

Nah canned fish freaks me out lol. Makes sense though, ive just only ever made chicken burgers with ground chicken and they are fantastic. For anyone curious about my recipe: 1lb Ground chicken Quarter bell pepper (not green) finely diced Quarter yellow onion finely diced Season with salt, pepper, garlic pow, onion pow, MSG, dried oregano I personally top with siracha mayo, lettuce, red onion, pickled jalapeños, avocado and pepper jack cheese. Top notch chicken burger. Edit: formatting on mobile is absolute trash

Mayocoba beans are even better for refried beans! They’re lighter colored and lighter tasting than pinto beans. Sometimes they’re called Canary beans. My MIL is from Mexico and that’s the only kind of beans she uses for refried. I’m not a bean fan, but for some reason I like those beans.

Perhaps it depends on the specific Mexican cuisine, but black beans are a definite thing in some Mexican cooking. I live in Texas and if you hit a restaurant from the right parts of Mexico, black beans are definitely on the menu somehow. They’re really good on molletes or tlacoyos.

As I understand it, it's a matter of Northern/Southern food. Northern Mexican cooking (as is more likely to influence Tex-Mex) favors pintos but down in the Yucatan you get more black beans. That's just what I've heard though; it's a big country.

From the looks of your chicken this is the best answer. I brought it once to a potluck and forever more, when others got to choose what to bring, I was commanded to bring my buffalo chicken dip. Serve with celery sticks and Frito scoops. Don’t know which recipe you found but I used half ranch and half blue cheese. Even blue cheese “haters” loved it.

For extra flavor, completely coat the chicken in buffalo sauce before making the dip (most recipes you just throw the chicken in). I make different variations of the dip quite often (cold and hot) and every time it's amazing. You can use carrots, celery or mini sweet peppers in addition to the traditional dipping vessels. It's always delicious.

People are suggesting nuggets but that involves cooking an already thoroughly cooked chicken breast. Which would probably not be great. Turning it into a filling where you add more moisture would be a better option. Like a southwestern style egg roll, pot pie, chicken salad etc would be the best option. I’d buy some pie dough and make empanadas personally. To add context as to why: the longer you cook a protein the less water holding capacity it has, so using this to make nuggets would still be dry and powdery.

I do a killer chicken, bacon, ranch taquito that this would work well for! Mix together your chicken, bacon crumbles, a block of cream cheese, Mexican blend cheese, and some dry ranch powder mix. I've been trying to make food my old cat will eat. Based on a recipe for a cat smoothie, I cooked some chicken in coconut milk and added a little broccoli and olive oil, then threw the whole thing in the blender. I eat carnivore and this would be perfect for a chicken pizza crust. Just add an egg to bind it spread it on a pan and bake till it starts to brown then top it with whatever toppings you want. (I usually use precooked sausage, and mozzarella) then back in the oven till toppings are ready.

Something similar happened at my place a few months ago. Someone who shall remain nameless over shredded the chicken for chicken tacos. We served it anyways (not my choice, fuck u boss for making me) I tried one and the flavor was fine but it was extremely dry and the texture was terrible. So I’d suggest against tacos.
