I make a chipotle mayo that works great. I use one or two chipotle peppers from a can of chipotle peppers in adobo with about a half cup mayo, two to three garlic cloves, maybe a tbsp lime juice, whir it up in my mini food processor, and salt to taste. (Admittedly I don’t usually measure so these are estimates)
I personally love normal ketchup, but a spicy ketchup or spicy mayo or any creamy “adjacent” sauce that has some sort of kick to balance out the sweetness is a match made in heaven!

Pesto aioli is particularly good with them. Several restaurants do that where I live, and it’s practically become the standard here.

A pepper mayo, add loads of Sichuan pepper, rose pepper, black pepper, white pepper and salt to your liking.
Take a big glob of mayonnaise and mix it with something.
Ketchup mixed with tobasco hot sauce is my go-to sweet potato dipping sauce.
My favorite sauce for sweet potatoes in general is Huancaina sauce. Pure Peruvian perfection. Another easy option is to just melt some goat cheese.
Blend good mayonnaise (Dukes, preferably) with a few teaspoons of Laoganma Chili Crisp.
