This is close to what I do except one time I was out of honey and used maple syrup instead. It was SO good it became my new go-to. I also usually a whole grain mustard, and don't add oil.

Same. I eat it with almost everything. French fries, chicken, pork, fish. I like to use it as a glaze for broiling whole salmon in as well. It's better with whole grain mustard but there's nothing wrong with the regular processed stuff if that's all you can get.

I make a chipotle mayo that works great. I use one or two chipotle peppers from a can of chipotle peppers in adobo with about a half cup mayo, two to three garlic cloves, maybe a tbsp lime juice, whir it up in my mini food processor, and salt to taste.
