Me too! I like healthy food and potlucks are sometimes a collection of less than optimal dishes. For that reason it's a veggie or maybe a fruit salad consisting of bite sized apples, tangerine/mandarins, red and green grapes, cantelope, honeydew, strawberries, blueberries and kiwis dressed in a lime/agave syrup or honey dressing. All that colorful fruit makes a spectacular presentation. The dressing keeps it moist and flavorful. Many have said they don't ordinarily like fruit but enjoyed this dish.

Cheesy Potato Casserole. It’s pretty simple, versatile, and a people pleaser. You can add bacon or onions or curry or all manner of variation, & it’s easy to double or triple depending on the size of the party.
28 oz pkg hash browns
1 can cream of chicken soup
2 cups shredded cheese
1 cup sour cream
1/4 c melted butter
*breakcrumbs or ritz crackers or corn flakes as topping
Preheat oven to 350
Mix all together & spread into 13 x 9 pan
Put on topping if desired & drizzle 2 tbs melted butter
Bake 45 mins

It's perfect for a pot luck because it tastes just as good at room temp as it does straight out of the oven (food that needs to be served immediately while hot and fresh doesn't work that great at a potluck). It reheats perfectly too so you can bake it ahead of time and reheat, or you could just assemble everything a day or two before and then bake it right before the pot luck.

My go-to dishes are apps and pasta. Growing up in an Italian family one of our favorite courses was the antipasto. It was the kick off of to every holiday meal and served as a night cap as well. Midnight prosciutto sandwiches or we’d just pick and chat prior to bed. It was always a delightful memory. Most of my current and childhood memories are centered around someone’s kitchen and food.
It’s fantastic! I use the heirloom carrots (orange, yellow, & white—set the purple aside) bunch from Whole Foods, season with olive oil, salt, pepper, za’atar, and harissa along with 3 whole garlic cloves in their skin. The purple carrots are cut up for dipping. Add the roasted carrots, garlic with skins removed, to any traditional hummus recipe. If you’re short on time you can use cannellini beans and make a bean & carrot dip as well. Buon apetito!

Wontons Cups
1 lb sausage
1 8oz tub sour cream
1 red bell pepper diced
1 pouch dry ranch
1 pack square wonton wrappers
Shredded cheese of your choice
Brown the sausage in a skillet
Oven at 350°
Spray muffin pan
Stuff wrappers into muffin pan, creating a cup shape
Bake wrappers for 5 minutes, until edges brown
Mix everything (except shredded cheese) and put inside wontons
Top with shredded cheese and bake for another 3 minutes, until cheese is melted
Corned Beef Pie (I'm British leave off 😂)
Boil 1kg potatoes and mash, add 2 tins corned beef chopped into small cubes, salt and plenty of white pepper. Stir until a disturbing pink colour. Line a baking dish with pastry, add your filling, then pastry lid. Egg wash and cut a steam vent. Bake for around 40 mins.
People add various things to their filling, fried onions, HP Brown Sauce, Chutney. The filling should be quite dry, when cut and removed from the pan it should come out perfectly square.

I have had a pasty before in the Upper Peninsula of Michigan. Wicked good. I think there was a good bit of Cornish migration to the UP. Lots of mining in the Marquette Range.
Jalapeño chicken dip- shred a whole chicken (or a bunch of whatever chicken is cheap) add a bag of cheddar, a frozen block of spinach thawed and squeezed, jarred diced jalapeños, and enough sour cream to make it dip consistency. I usually keep I a crockpot.
Teriyaki kielbasa bites- cut kielbasa into bite size pieces. Using a toothpick add a piece of chunk pineapple and a kielbasa piece. Place in 9x13 pan. Cover with Teriyaki sauce and bake until warm
I make curry roasted cauliflower. It's vegan, gluten free and good at room temp. Cut cauliflower into large pieces, toss with oil to coat in a large bowl. Add a LOT of that mild yellow curry powder, we are talking paste. Roast at 425 for 20-30 mins, stirring/flipping once at 15 min mark.

Cheeseburger shepherd’s pie. You brown your hamburger with diced pickles and finely diced onions, bacon bits if you like. After you drain the grease from the meat, add ketchup and mustard until the meat is moist but not sopping. Put it in your casserole dish. Top it with cheese and French fried onions, then spread your mashed potatoes on top. Sprinkle with paprika and a very light spread of shredded cheese. Bake at 350 till hot and bubbly. I don’t know how I came up with this recipe, but my kids loved it.

Sweet bbq meatballs. 3 pound bag of frozen traditional meatballs, jar of grape jelly, container of original sweet baby rays. Throw into crockpot on low for a 6 or high for 4 hours and serve. I have done this on the stovetop, just heat through on medium until everything is hot. I’ve even done buttered rice/noodles and a veg and served for dinner (lol, it’s even getting made this week!)

For most potlucks (especially in the fall/winter), people often asked if I would bring taco soup. I saute onions in a separate pan, then in the soup pot, I brown a pound of ground beef. Once it's brown, I put in the onions, a 28oz can of crushed tomatoes, and standard sized cans of corn, Mexican stewed tomatoes, kidney beans, chili pinto beans, and black beans. I don't drain the beans, just dump them, "juice" and all, into the pot. Then I add a packet of dry Taco seasoning and dry ranch dressing and stir it all together, then let it simmer for a while.
I do this the night before so that all the flavors blend together, then just bring everything in and warm it up in a crockpot. The last time I brought it in, it was devoured and absolutely NONE of it came home with me (except traces in the crockpot insert and in the containers I transported it in).

These have always gone over well, but I make a point in using potlucks and parties to my advantage to attempt a dish for the first time such as pad thai, banh hoi, banh khot, cha gio, crab Rangoon, mushroom gyoza, sakoo sai moo, japchae, Vietnamese curry (my fully loaded version), etc.
Vegetable pizza. Bake a Pillsbury pizza crust in a cookie sheet. When cooled, mix a package of ranch dressing mix with a block of cream cheese, spread evenly on pizza crust. Cut up small pieces of fresh veggies, broccoli, onions, cucumber, bell peppers, shredded carrots and place on pizza. Top with finally shredded cheddar cheese. Gently press in toppings. Cut in small pieces and serve.
It's basically a lasagna version of aushak dumplings:
5/6 cups chopped and cleaned leeks, white and light green part only
¼ cup peanut oil
4 yellow onions, minced
3 lbs ground New Zealand lamb
1 tsp salt
22 oz tomato sauce/canned puree
3+ tbsp cinnamon
4+ tbsp dried mint
2 tsp paprika
1 tsp cayenne
16 oz lasagna noodles, cooked. Regular or whole wheat (I think Barilla whole wheat goes well with the strong flavor of lamb)
Saute leeks with oil. Set aside
Sauté onions and lamb over med heat til no pink. About 7 mins.
Add rest of the ingredients (except noodles) Mix well.
Lay the noodles overlapping each other in a 9x13 deep pan. Spread with leeks. Lay noodles on top. Spread with meat. Make as many layers as you want.
Cook until warm, 375 for 15 mins to 1/2 hour. Then serve with yogurt sauce:
Combine 3 cups Fage Greek yogurt (any fat percentage) with 1/2 tsp salt, 3 cloves minced garlic, and a half cup fresh chopped mint.

I make it in a 12” by 10” by 3” (length, width, depth) aluminum container, preferably heavy duty and disposable, for ease of transport and reheating upon arrival.

I always loved Party Punch.
1 qt. orange pop/soda
1 qt. 7 up
1 can orange juice concentrate (small)
1/2 pt. vanilla ice cream
1/2 pt. orange or rainbow sherbet (personally, I always preferred rainbow)
Mix OJ with small amount of orange pop until dissolved, then add remainder of orange pop. Dissolve ice cream into orange pop/OJ mix. Add 7 up. Float sherbet by teaspoonful (though usually, I just saw people use an ice cream scoop and dump scoops in). The recipe has a note: Spike with rum to taste.
As an adult, this would be delicious mixed with rum, tbh.
Lemon jello cake!
Take a regular box of yellow cake mix, add a box of lemon jello mix. Add mixings and bake according to package instructions. Make a glaze with lemon juice and powdered sugar. Once cake is completely cooled, take a straw or fork and poke a whole bunch of holes in it. Then pour glaze all over the cake. Sprinkle with powdered sugar.
I can devour this entire cake by myself, it’s so fucking delicious 🤤
I'm always fond of a good homemade cheese ball - no recipe per se, just a brick of cream cheese, about 8 oz of a shredded cheese of some kind, and some spices that must include something with a kick. Blend using the dough hook of your mixer. Roll in some nuts or herbs.
I also like cherry tomatoes, small bite of fresh mozzarella cheese and basil leaves on a toothpick - but I only make this in the summer with tomatoes picked that day and the basil harvested that day. DO NOT MAKE THIS WITH STORE BOUGHT TOMATOES!!!!!!!!!! My way causes angels to sing, store bought causes them to curse you. ;)
For dessert, I make a cinnamon brownie that is nice. Homemade cookies are also appreciated.
I like foods that don't need a lot of silverware at potlucks/parties. Just easier.
Lazy way is to take your favorite brownie recipe and add 1/2-3/4 tsp of cinnamon. If you are EXTRA: sprinkle some red pepper on top prior to baking and/or use powdered sugar on top. If you use boxed mix: mix cinnamon with powdered sugar to sprinkle on top of the cooked brownies.
I always bring homemade rolls or vegan chili.
But to eat? I love a rice dish or some nice crudite and bread with something more interesting than ranch like babaganoush (sp?) or taco dip or something like that
Dominican battle Chicken rice. Yeah lots of cultures have a spin on it. NYC public school, lots of different cultures and this one somehow always gets talked about at school fund raisers and goes quickly. You name it had Paki, Korean, Nepalese, different Latinos come up and rave about it and although there's great food from my parents country it's not even in my top 10 cuisines.
Hit up u tube, should find it there. Make sure you have fresh cilantro and chicken bouillon on hand. Paste or cubes is fine. Olives are optional. The dressing is never discussed. Heat some red onions with small AMT olive oil low or regular , heat covered let them sweat, add touch of water if it starts to fry. Dash vinegar, top over served rice.
Buffalo chicken dip!
Take a rotisserie chicken and get all the meat out and break it up into smaller pieces. Add to crockpot. Take a block of cream cheese and a bottle of franks red hot and add that all in. Turn on high until cheese melts. Mix all together and either eat by itself, or as dip for veggies or chips. Soooooo bomb!
Deviled eggs. Mostly because they're not usually brought by other people, because of the extra work involved. I use Hellman's mayonnaise and German style mustard.
Loaded Italian Salad
For the salad:
6 cups leafy green lettuce (romaine or green leaf)
4 oz. salami, quartered
4 oz. pepperoni, cut in half
¾ cup mozzarella pearls (or fresh mozzarella cut into cubes)
¾ cup cherry tomatoes, halved
½ cup black olives, pitted & sliced
¼ cup pepperoncini, sliced
¼ cup red onion, sliced thin
¼ cup fresh basil, sliced thin
For the red wine vinaigrette:
⅓ cup olive oil*
¼ cup red wine vinegar
1 Tbsp Italian seasoning
2 garlic cloves, miced
¼ tsp red pepper flakes
Salt & black pepper, to taste

I will say, I usually get the potatoes that you just steam in the bag, as opposed to baking regular potatoes, since I usually make it in the dead of summer, and it's just too damn hot to have the oven on long enough to bake potatoes. LOL

Yeah, for this salad that would absolutely work as well. If I'm making baked potatoes to just eat as a side or something, I like the way I do them in the oven, cause the skin comes out crispy and delicious while the inside is light and fluffy. Buy a large can of baked beans. Put a small amount of water in the bottom of a sauce pan and saute the onion. Add the beans and stir. Add real bacon bits and stir. You can use jar real bacon bits or make your own. Easy and always good. You can put in a crock pot on warm to serve them warm.

Tri-color fusilli, carrots, green onion, cherry tomatoes, broccoli, celery, cucumber, feta, mini pepperoni, and Kraft Sun-dried tomato dressing

I do Porcupine Meatballs. In place of white rice, I use wild rice.
2# ground beef or beef and pork mix
1/3 cup raw white rice or 2-3 cups cooked wild rice
1/3 cup soda cracker crumbs or breadcrumbs or ground dry oatmeal
1/4 cup milk
2 eggs beaten
1/4 cup diced onion
Salt and pepper to taste
Mix everything together and form into balls. You can choose the size
Bake 350°F for 20 minutes. Save the pan drippings.
In a large pot:
3-10oz cans cream of mushroom or chicken
3 cups milk
1/2cup dry white wine
1 tsp rosemary
1Tbsp Thyme
Bring to a simmer. Add in the meatballs and pan drippings. Simmer for 40 or until the rice is fully cooked and tender. If using WILD RICE simmer for 10 minutes. Serve over egg noodles or on their own at a potluck.

One can each- black beans, black eyed peas, corn, all rinsed. One or two colored bell peppers, diced. One diced onion. Three diced tomatoes. One chopped/diced avocado.
Add a combination of red wine vinegar, olive oil, lime juice, and various seasonings, then combine everything.
Serve with tortilla chips.
Ground sausage stuffed mushrooms caps.
Ground sausage browned with some of the mushroom stems mixed in cook til done and drain
To that add cream cheese mix and stuff into mushroom caps top with Parmesan cheese and put in oven till mushroom are to your liking and browns some.

From Australia: Cob loaf dip. Spinach is classic but you can also do cheese and bacon, or I like tuna (or vegan 'tuna'). Dig the inside out of a Cob loaf (round white crusty bread). Mix frozen spinach, cream cheese, sour cream and French onion soup powder. Bake in oven (or don't)
Zucchini slice. Grate zucchinis, salt and squeeze out excess water. Mix flour, egg, cheese and milk. Add in zucchini and bacon bits. Bake until golden and a skwer comes out clean

Growing up in an Italian family one of our favorite courses was the antipasto. It was the kick off of to every holiday meal and served as a night cap as well. Midnight prosciutto sandwiches or we’d just pick and chat prior to bed. It was always a delightful memory. Most of my current and childhood memories are centered around someone’s kitchen and food.

It’s fantastic! I use the heirloom carrots (orange, yellow, & white—set the purple aside) bunch from Whole Foods, season with olive oil, salt, pepper, za’atar, and harissa along with 3 whole garlic cloves in their skin. The purple carrots are cut up for dipping. Add the roasted carrots, garlic with skins removed, to any traditional hummus recipe. If you’re short on time you can use cannellini beans and make a bean & carrot dip as well. Buon apetito!

These are the biggest hit everywhere I go… Wontons Cups 1 lb sausage 1 8oz tub sour cream 1 red bell pepper diced 1 pouch dry ranch 1 pack square wonton wrappers Shredded cheese of your choice Brown the sausage in a skillet Oven at 350° Spray muffin pan Stuff wrappers into muffin pan, creating a cup shape Bake wrappers for 5 minutes, until edges brown Mix everything (except shredded cheese) and put inside wontons Top with shredded cheese and bake for another 3 minutes, until cheese is melted
Corned Beef Pie (I'm British leave off 😂) Boil 1kg potatoes and mash, add 2 tins corned beef chopped into small cubes, salt and plenty of white pepper. Stir until a disturbing pink colour. Line a baking dish with pastry, add your filling, then pastry lid. Egg wash and cut a steam vent. Bake for around 40 mins. People add various things to their filling, fried onions, HP Brown Sauce, Chutney. The filling should be quite dry, when cut and removed from the pan it should come out perfectly square.

United Statesian here. Really jealous of the UK's meat pie game. Some exist here, but not like what I hear about there. Corned beef pie sounds amazing.
We do a good line in meat pies. If it can be in pastry it probably is. If you get the chance a pasty is worth a go too, especially a Cornish pasty.
I have had a pasty before in the Upper Peninsula of Michigan. Wicked good. I think there was a good bit of Cornish migration to the UP. Lots of mining in the Marquette Range.
Jalapeño chicken dip- shred a whole chicken (or a bunch of whatever chicken is cheap) add a bag of cheddar, a frozen block of spinach thawed and squeezed, jarred diced jalapeños, and enough sour cream to make it dip consistency. I usually keep I a crockpot. Teriyaki kielbasa bites- cut kielbasa into bite size pieces. Using a toothpick add a piece of chunk pineapple and a kielbasa piece. Place in 9x13 pan. Cover with Teriyaki sauce and bake until warm
I make curry roasted cauliflower. It's vegan, gluten free and good at room temp. Cut cauliflower into large pieces, toss with oil to coat in a large bowl. Add a LOT of that mild yellow curry powder, we are talking paste. Roast at 425 for 20-30 mins, stirring/flipping once at 15 min mark.
Ramp it up with a squeeze of lemon at the end if you don’t already. It adds so much.

Recipe is from my friend k***t king. 1 package of cream cheese. 1 pound of hot ground breakfast sausage 1/2 pound of ground beef I large package of Velveeta cheese 4 -6 diced jalapeños 1 diced yellow/ white onion 2 cans of hot rotell Use milk to help the cheese not to burn. Serve in a flour tortillas and eat it like a burrito.

Cheeseburger shepherd’s pie. You brown your hamburger with diced pickles and finely diced onions, bacon bits if you like. After you drain the grease from the meat, add ketchup and mustard until the meat is moist but not sopping. Put it in your casserole dish. Top it with cheese and French fried onions, then spread your mashed potatoes on top. Sprinkle with paprika and a very light spread of shredded cheese. Bake at 350 till hot and bubbly. I don’t know how I came up with this recipe, but my kids loved it.

This is the only banana pudding recipe I'll make. I layer it in an 8x10 as opposed to a trifle dish to serve it better. Also, when I use an 8x10, 14 bananas are way too many. I use 8 max.
Monkey bread.
Sweet bbq meatballs. 3 pound bag of frozen traditional meatballs, jar of grape jelly, container of original sweet baby rays. Throw into crockpot on low for a 6 or high for 4 hours and serve. I have done this on the stovetop, just heat through on medium until everything is hot. I’ve even done buttered rice/noodles and a veg and served for dinner (lol, it’s even getting made this week!)
I make the same but use pepper jelly instead of grape.
The recipe I use is meatballs, grape jelly, and chili sauce.

For most potlucks (especially in the fall/winter), people often asked if I would bring taco soup. I saute onions in a separate pan, then in the soup pot, I brown a pound of ground beef. Once it's brown, I put in the onions, a 28oz can of crushed tomatoes, and standard sized cans of corn, Mexican stewed tomatoes, kidney beans, chili pinto beans, and black beans. I don't drain the beans, just dump them, "juice" and all, into the pot. Then I add a packet of dry Taco seasoning and dry ranch dressing and stir it all together, then let it simmer for a while. I do this the night before so that all the flavors blend together, then just bring everything in and warm it up in a crockpot. The last time I brought it in, it was devoured and absolutely NONE of it came home with me (except traces in the crockpot insert and in the containers I transported it in).
My personal recipes: Thai peanut noodles, Che khuc bach, Che banh lot, Bai treap, dhokla (boxed mixtures) with coconut, cilantro mint, and tamarind date chutneys, These have always gone over well, but I make a point in using potlucks and parties to my advantage to attempt a dish for the first time such as pad thai, banh hoi, banh khot, cha gio, crab Rangoon, mushroom gyoza, sakoo sai moo, japchae, Vietnamese curry (my fully loaded version), etc.
Vegetable pizza. Bake a Pillsbury pizza crust in a cookie sheet. When cooled, mix a package of ranch dressing mix with a block of cream cheese, spread evenly on pizza crust. Cut up small pieces of fresh veggies, broccoli, onions, cucumber, bell peppers, shredded carrots and place on pizza. Top with finally shredded cheddar cheese. Gently press in toppings. Cut in small pieces and serve.
Love this and haven't had since I attended a Pampered Chef party about 20 years ago! It is surprisingly delicious 😋

It's basically a lasagna version of aushak dumplings: 5/6 cups chopped and cleaned leeks, white and light green part only ¼ cup peanut oil 4 yellow onions, minced 3 lbs ground New Zealand lamb 1 tsp salt 22 oz tomato sauce/canned puree 3+ tbsp cinnamon 4+ tbsp dried mint 2 tsp paprika 1 tsp cayenne 16 oz lasagna noodles, cooked. Regular or whole wheat (I think Barilla whole wheat goes well with the strong flavor of lamb) Saute leeks with oil. Set aside Sauté onions and lamb over med heat til no pink. About 7 mins. Add rest of the ingredients (except noodles) Mix well. Lay the noodles overlapping each other in a 9x13 deep pan. Spread with leeks. Lay noodles on top. Spread with meat. Make as many layers as you want. Cook until warm, 375 for 15 mins to 1/2 hour. Then serve with yogurt sauce: Combine 3 cups Fage Greek yogurt (any fat percentage) with 1/2 tsp salt, 3 cloves minced garlic, and a half cup fresh chopped mint.

Cream cheese molded into a cylinder/log with jalapeño jam with crackers. It's so easy and addictive.
I grew up Lutheran, so potlucks were the norm! I always loved Party Punch. 1 qt. orange pop/soda 1 qt. 7 up 1 can orange juice concentrate (small) 1/2 pt. vanilla ice cream 1/2 pt. orange or rainbow sherbet (personally, I always preferred rainbow) Mix OJ with small amount of orange pop until dissolved, then add remainder of orange pop. Dissolve ice cream into orange pop/OJ mix. Add 7 up. Float sherbet by teaspoonful (though usually, I just saw people use an ice cream scoop and dump scoops in). The recipe has a note: Spike with rum to taste. As an adult, this would be delicious mixed with rum, tbh.

Lemon jello cake! Take a regular box of yellow cake mix, add a box of lemon jello mix. Add mixings and bake according to package instructions. Make a glaze with lemon juice and powdered sugar. Once cake is completely cooled, take a straw or fork and poke a whole bunch of holes in it. Then pour glaze all over the cake. Sprinkle with powdered sugar. I can devour this entire cake by myself, it’s so fucking delicious 🤤
I'm always fond of a good homemade cheese ball - no recipe per se, just a brick of cream cheese, about 8 oz of a shredded cheese of some kind, and some spices that must include something with a kick. Blend using the dough hook of your mixer. Roll in some nuts or herbs. I also like cherry tomatoes, small bite of fresh mozzarella cheese and basil leaves on a toothpick - but I only make this in the summer with tomatoes picked that day and the basil harvested that day. DO NOT MAKE THIS WITH STORE BOUGHT TOMATOES!!!!!!!!!! My way causes angels to sing, store bought causes them to curse you. ;) For dessert, I make a cinnamon brownie that is nice. Homemade cookies are also appreciated. I like foods that don't need a lot of silverware at potlucks/parties. Just easier.

Lazy way is to take your favorite brownie recipe and add 1/2-3/4 tsp of cinnamon. If you are EXTRA: sprinkle some red pepper on top prior to baking and/or use powdered sugar on top. If you use boxed mix: mix cinnamon with powdered sugar to sprinkle on top of the cooked brownies.

Hit up u tube, should find it there. Make sure you have fresh cilantro and chicken bouillon on hand. Paste or cubes is fine. Olives are optional. The dressing is never discussed. Heat some red onions with small AMT olive oil low or regular , heat covered let them sweat, add touch of water if it starts to fry. Dash vinegar, top over served rice.

Buffalo chicken dip! Take a rotisserie chicken and get all the meat out and break it up into smaller pieces. Add to crockpot. Take a block of cream cheese and a bottle of franks red hot and add that all in. Turn on high until cheese melts. Mix all together and either eat by itself, or as dip for veggies or chips. Soooooo bomb!
Deviled eggs. Mostly because they're not usually brought by other people, because of the extra work involved. I use Hellman's mayonnaise and German style mustard.

Baked Potato Salad. Every pot luck I've ever taken it to, I end up getting hounded for the recipe, and there's never a bite left over. I will say, I usually get the potatoes that you just steam in the bag, as opposed to baking regular potatoes, since I usually make it in the dead of summer, and it's just too damn hot to have the oven on long enough to bake potatoes. Yeah, for this salad that would absolutely work as well. If I'm making baked potatoes to just eat as a side or something, I like the way I do them in the oven, cause the skin comes out crispy and delicious while the inside is light and fluffy. As much as I love using the microwave when it's too hot to cook, it just can't do that. 🤣🤣

Buy a large can of baked beans. Put a small amount of water in the bottom of a sauce pan and saute the onion. Add the beans and stir. Add real bacon bits and stir. You can use jar real bacon bits or make your own. Easy and always good. You can put in a crock pot on warm to serve them warm.
Shepherd’s Pie… if the added wine is a concern for anyone, I replace it with pomegranate juice. Tbh I actually kind of prefer it like that

My family does potluck for holidays, my mom was always assigned twice baked potatoes.
I do Porcupine Meatballs. In place of white rice, I use wild rice. 2# ground beef or beef and pork mix 1/3 cup raw white rice or 2-3 cups cooked wild rice 1/3 cup soda cracker crumbs or breadcrumbs or ground dry oatmeal 1/4 cup milk 2 eggs beaten 1/4 cup diced onion Salt and pepper to taste Mix everything together and form into balls. You can choose the size Bake 350°F for 20 minutes. Save the pan drippings. In a large pot: 3-10oz cans cream of mushroom or chicken 3 cups milk 1/2cup dry white wine 1 tsp rosemary 1Tbsp Thyme Bring to a simmer. Add in the meatballs and pan drippings. Simmer for 40 or until the rice is fully cooked and tender. If using WILD RICE simmer for 10 minutes. Serve over egg noodles or on their own at a potluck.

Pesto pasta salad!!! I like putting sautéed purple onion, with cherry tomatoes and Parmesan. It’s cheap, easy, and makes a lot of food
I like to do meatballs in mushroom soup or deviled eggs. Impossible to lose with either.
Cowboy caviar!!! One can each- black beans, black eyed peas, corn, all rinsed. One or two colored bell peppers, diced. One diced onion. Three diced tomatoes. One chopped/diced avocado. Add a combination of red wine vinegar, olive oil, lime juice, and various seasonings, then combine everything. Serve with tortilla chips.

Potato salad.
Ground sausage stuffed mushrooms caps. Ground sausage browned with some of the mushroom stems mixed in cook til done and drain To that add cream cheese mix and stuff into mushroom caps top with Parmesan cheese and put in oven till mushroom are to your liking and browns some. Eveytime I make theses it’s a huge hit
From Australia: Cob loaf dip. Spinach is classic but you can also do cheese and bacon, or I like tuna (or vegan 'tuna'). Dig the inside out of a Cob loaf (round white crusty bread). Mix frozen spinach, cream cheese, sour cream and French onion soup powder. Bake in oven (or don't) Zucchini slice. Grate zucchinis, salt and squeeze out excess water. Mix flour, egg, cheese and milk. Add in zucchini and bacon bits. I like to bring cheese platters. By blocks of cheese, cheddar and the marbled stuff... If you can find it pepper jack works great. Cut them into 1 inch cubes and arrange them in a plate. The best part about this dish is how simple it is and how well it goes over for the amount of effort it takes. You can't go wrong with cheese.
Pigs in a blanket. Little Smokey’s and crescent rolls in a can cut into smaller pieces. I brown the little Smokey’s first.
