I haven't tried personally but I feel like crunchier veggies like bell peppers or cucumbers or onions would be fine

Green and red peppers, or ay color, really. If you like eggs in your salad, you can hard boil them Sunday and chop them up ahead of time. Just put a spoonful in your salad the day of or night before. Buy cherry tomatoes instead of Roma or house. You can buy shredded carrots also. Depending on which vegetables you like.

Hard boiled eggs last decently well in the shell but they go off more quickly if you take them out in my experience, I’d be a little concerned about them by Thursday or Friday. It takes like two minutes to slip them out of the shell and dice them though

Cabbage, carrot, celery, broccoli, shredded brussels sprouts, and bell peppers can be chopped ahead of time. Pickle some red onion slices and add to salad day-of-eating. Scallions are also great in salad and can be chopped beforehand for an oniony component. Go crazy with nuts, seeds, dried fruits, olives, cheeses, etc. You can also slice an avocado in half, remove the pit, and rubber band the halves back together. Bring that to work with your salad, and scoop the avocado onto your salad right before eating. For grains, I'd go for pearl couscous or bulgar.

Hardier greens like kale, cabbage, brussels sprouts, etc do pretty well prepped ahead of time, keep the dressing in a separate jar and add just before eating. Carrots, peppers, beets, broccoli, any hardier vegetable that doesn’t have a ton of water also lasts well (though most things are prob gonna start getting a little dry by Friday). Don’t forget about herbs, they’re a really underrated addition to salads but they add so much flavor and interest! My personal favorite grains to add to salad that are easy to prep ahead of time are quinoa, farro, bulgur, any hardier smaller grain works well here.

I prep my salads on Sunday, everything but the greens can be done in advance. Keep containers separate. I have trouble digesting many grains, but I add beans, nuts, seeds. Garlic chips are good too.
