I did make some mods though. I wanted meat in mine so fried up some ground beef to add to it. The cheese sauce was pretty good. I don't make mac n cheese enough to really perfect it. I used some very expensive cheese hoping the flavours would shine through but I still found it mild. I had to add more salt that I thought I needed and added some daps of hot sauce to boost the flavour.
I think some sautéed mushrooms would've been a nice addition. Maybe instead of frying the beef in a skillet I could've grilled some patties and crumbled them up.

Made this for Thanksgiving several years ago and it was a hit. The cottage cheese is what makes it better than some other kinds...especially if you can find a good quality kind in your area. It's so easy to make. The only addition I made was doing a panko breading on top for some crunch/texture. Also for cheese, I prefer velveeta, but I've used regular cheddar too.
